PRODUCT DESCRIPTION

Ossobuco or osso buco is a speciality veal cut from the Lombardy region in northern Italy but every bit as delicious from our heritage beef breeds.

A hearty and luxurious one-pot ingredient; shin of beef ossobuco is a full slice of beef shin cut straight through the marrow bone. The bone delivers complex flavours during low and slow braising, the marrow enriches and deepens for the ultimate melt in your mouth dreaminess.

Beef ossobuco is an autumn and winter classic, but equally as good with lighter flavours in spring and summer.

INGREDIENTS

Grass-fed, heritage breed beef slow grown to maturity on the lush, green pastures of the Yorkshire Dales. Dry-aged on the bone for >28 days.
